Mini Apple and Raspberry pies

Ingredients

  • 1 store-bought pie crust
  • 3 Honeycrisp apples
  • 1 cup raspberries
  • ½ cup granulated sugar
  • 1 tbsp lemon juice
  • 2 tbsp Honeycrisp apple juice
  • 1 tsp apple pie spice
  • A pinch of salt
  • ¼ cup all-purpose flour
  • 1 egg
  • 1 tbsp water

Directions

  1. Preheat the oven to 425F and line a muffin tin
  2. Roll out the pie crust and, using a circular cookie cutter, cut out circles of dough. Place the dough at the bottom of the muffin tin cups.
  3. In a large bowl, mix the apples, raspberries, sugar, lemon juice, spices, salt, and flour. Transfer the mixture into the muffin tin cups.
  4. Add strips of dough to form the top of the pies, then brush with the egg beaten with water.
  5. Bake for about 25-30 minutes or until the crust is golden.
