Oat and apple muffins

Ingredients

For the muffins  

1 ½ cups quick-cooking rolled oats

1 ½ cups all-purpose flour

⅔ cup brown sugar

1 tsp ground cinnamon

¼ tsp ground nutmeg

1 ½ tsp baking powder

½ tsp baking soda

¼ tsp salt

½ cup unsweetened applesauce

½ cup milk

¼ cup vegetable oil

1/8 cup apple sauce

1 large egg

1 tsp vanilla extract

1 cup peeled and diced apples

For the oat crumble 

¼ cup quick-cooking rolled oats

2 tbsp brown sugar

1 tbsp apple juice

2 tbsp butter, melted

¼ tsp ground cinnamon

Directions

  1. Preheat oven to 400°F.  Line a muffin pan with 12 paper liners.
  2. In a large bowl, combine oats, all-purpose flour, brown sugar, cinnamon, nutmeg, baking powder, baking soda and salt.
  3. In a separate bowl, whisk together applesauce, milk, oil, apple juice, egg and vanilla extract.
  4. Pour wet ingredients into dry ingredients and mix gently just until combined.
  5. Add the apples, gently folding them in.
  6. Divide the batter evenly among the 12 greased paper cases or muffin tins.
  7. In a small bowl, mix all the crumble ingredients.  Sprinkle each muffin with this mixture.
  8. Bake for 25-30 minutes or until golden brown and a toothpick inserted in the center comes out clean.
  9. Remove from the oven and let cool.
