Apple Breakfast Tacos

Ingredients

  • 3 large tortillas
  • ¼ cup brown sugar
  • 1 tsp cinnamon
  • Vegetable oil of your choice for cooking
  • TOPPINGS IDEAS: Greek yogurt, cream cheese, jams, nut butter, crushed nuts, shredded coconut, chocolate chips…

Apple Cinnamon Topping

  • 2 apples, diced
  • 1 ½ tbsp salted butter
  • 3 tbsp Rougemont apple juice
  • 1 tsp apple pie spice
  • 1 tbsp flour

Directions

For the taco shells :

  1. Preheat the oven to 180 °C (350 °F) and have a muffin tin ready.
  2. Using a circular cutter or a knife, cut 3 smaller circles from each large tortilla.
  3. In a small bowl, mix the brown sugar and cinnamon.
  4. Dip the tortillas in oil, then coat them with the brown sugar and cinnamon mixture.
  5. Place the muffin tin upside down, then insert the tortilla between two slots to form a taco shape. Repeat for all tortillas.
  6. Bake for 10 minutes or until the tortillas are crispy.
  7. Add the apple cinnamon topping and enjoy!

For the apple topping :

  1. Peel and dice the apples.
  2. In a saucepan over medium heat, combine the butter and apple juice.
  3. Add the apples and spices, mix well, cover, and cook until the apples have softened.
  4. Add the flour, mix, and cook for about 1 minute.
  5. Set aside.

Chef's tip

If you don’t have apple pie spice, you can create your own blend : cinnamon, ginger, nutmeg, and allspice for a little kick.
