Apple Breakfast Tacos
Ingredients
- 3 large tortillas
- ¼ cup brown sugar
- 1 tsp cinnamon
- Vegetable oil of your choice for cooking
- TOPPINGS IDEAS: Greek yogurt, cream cheese, jams, nut butter, crushed nuts, shredded coconut, chocolate chips…
Apple Cinnamon Topping
- 2 apples, diced
- 1 ½ tbsp salted butter
- 3 tbsp Rougemont apple juice
- 1 tsp apple pie spice
- 1 tbsp flour
Directions
For the taco shells :
- Preheat the oven to 180 °C (350 °F) and have a muffin tin ready.
- Using a circular cutter or a knife, cut 3 smaller circles from each large tortilla.
- In a small bowl, mix the brown sugar and cinnamon.
- Dip the tortillas in oil, then coat them with the brown sugar and cinnamon mixture.
- Place the muffin tin upside down, then insert the tortilla between two slots to form a taco shape. Repeat for all tortillas.
- Bake for 10 minutes or until the tortillas are crispy.
- Add the apple cinnamon topping and enjoy!
For the apple topping :
- Peel and dice the apples.
- In a saucepan over medium heat, combine the butter and apple juice.
- Add the apples and spices, mix well, cover, and cook until the apples have softened.
- Add the flour, mix, and cook for about 1 minute.
- Set aside.
Chef's tip
If you don’t have apple pie spice, you can create your own blend : cinnamon, ginger, nutmeg, and allspice for a little kick.
